White Bean & Onion Fritters


I'm going to whip some of these up this evening. The process reminds me of 'fish cakes' my mother has made for years. We'll see how these stack up!

Here's the recipe...try some for yourself:

White Bean & Onion Fritters

  • 1 cup cannellini beans {either canned, or soaked and boiled}
  • 3 T olive oil
  • 1 small onion, finely chopped
  • Salt & Pepper to taste
  • 3/4 cup flour
Place beans in a food processor and whirl until you have a puree. Place puree in a bowl

Heat oil and add onions. Sautee 5 minutes or until soft. Remove and add to puree.

Season with S & P. Add 2 T flour to mixture, stir until smooth.

In same skillet, add enough oil to cover bottom of pan.

Mold puree into gold ball size balls. Roll in flour, and then squish into a patty.

Slide into pan, and cook 5 minutes each side. When finished place on a paper towel to absorb excess oil.

Consume when hot!

I like it 'cause its free


I've never been much of a "Barenaked Ladies" fan...but when given free tickets to see them tonight at the MTS centre, I'm their biggest fan.

The lights and back drops were pretty.

The intermission/ intro, consisted of a video of people writing what the BNL are....Melba toast. mean spirited, meatballs, mechanics, men, meticulous, ^ a metaphor, mezzo-sopranos, melting, meteoroids, melodious, medicine men, medicine balls, meat balls, meat loaf...it only got worse and worse from there. So did their jokes..things like are cabbage rolls and rock and roll the same things? Is speaking before you think the same as thinking before you speak. Then there was a long rambling about Perogies being root vegetables...yeah.

Jason and I...he's my favourite (okay, ONE of my favourite) St. Vital baristas.

Get er Done

I'm probably wasting my time blogging about all the things I need to be accomplishing this week. Instead of talking about them all, I should just be doing them. It just seems there are so many I can't keep them all strait in my head! Here's the list.

1. ) Get two friends addresses, and finally send off the parcels I'm planning to make up for them. I knit a hat for Jo's baby in August, and he still doesn't have it. Disgraceful!

2.) Clean out my closet. I'd like to be able to see the floor again.

3.) Finish at least one knitting project. Also to finish a re-adjusting pattern for another project.

4.) Make supper every night. I'm tired of eating Babaghanoush and left over ground beef. {Not together of course}

5). Finalize the details of a job instructing wall climbing.

6). E-mail Chuck about my FINAL seminary class. Which needs to be done in two months.

7.) Pay remaining amount of my speeding ticket

8.) Order climbing shoes (b-day gift from mom and dad)

9.) Change my calendars from December and January (respectively) to February.

10.) I know I'm forgetting something?

I think that's all for now...I'm sure there are many other little things, that in the process of doing these 9 things , will pop up.

I'm off to save the world, or at least make my bed.
